The smell of this Chocolate Peanut Butter Banana Bread is amazing. Fall is comfort food. Everyone wants to bake something warm and satisfying. For me; Banana Bread always comes to mind. Though you can, and I certainly do, bake Banana Bread year round. There is something about a rainy fall day and the smell of banana bread baking in the oven that make me feel all warm and fuzzy. I think adding chocolate and peanut butter chips, though not over chocolaty or too much peanut butter, is fabulous.
I had a bag of peanut butter and chocolate chips sitting in my cabinet that was left over from some cookies I had made months ago and I wanted to use them in something fun. On a whim I threw them into this banana bread recipe and yum! How tasty these loaves became. I love peanut butter, chocolate and banana and in this bread they became sublime.
Bananas don’t take long these days to ripen beyond what I like to eat on there own, I always seem to end up with a couple of the bunch going over that threshold to where I don’t like to eat them. What I then do is let them get really ripe, peel them, put them in a freezer plastic bag and throw them in the freezer. Whenever I want to bake some banana bread I take out what I need and let them thaw on the counter for a couple of hours or very gently defrost on low power in the microwave if I’m in a hurry. And wahoo! I’ve got the makings for banana bread. This Chocolate Peanut Butter banana Bread is very easy to make. Providing you have some ripe bananas, it can be thrown together in mere minutes.
This makes 2 loaves, I felt that the bag of chocolate and peanut butter chips in one loaf was just too much, you couldn’t taste the banana anymore and I don’t like to use half a bag for a recipe. I could be halved, but, why? This banana bread freezes wonderfully and then you have a treat for another time. Originally I had used white sugar in this recipe however I was low on sugar one afternoon and used brown instead (ok, maybe I was cleaning out my cupboards!) The molasses in the brown sugar added a depth to these loaves and helped blend all the different flavors together.

Banana Bread with chunks of milk chocolate and peanut butter
- 1 1/2 cups mashed very ripe bananas 3-4
- 4 teaspoons vanilla
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 3 cups all-purpose flour
- 1 cup whole wheat flour
- 1 1/2 cups sour cream or greek yogurt
- 2 cups peanut butter and milk chocolate chips 11 oz package

preheat oven to 350°

Butter and flour 2, 9 by 5 inch loaf pan.

In a medium bowl beat together the eggs, sugar, and vanilla.

Whisk in the mashed bananas and vanilla, beat well to combine.

In a separate bowl whisk the all purpose flour, whole wheat flour, baking soda, baking powder, and salt.

Stir the flour mixture into the banana mixture, mix just until combined.

Quickly stir in the sour cream also mixing just until combined.

Add in the chocolate and peanut butter chips. Try not to over mix and develop the gluten.

Pour the batter into the prepared pan.

Bake for one hour until a cake tester or toothpick inserted into the center come out clean.

Cool in the pan for 10 minutes and then unmold turn right side up and cool completely on a rack.for at least an hour, the flavor will improve as it cools.
