Grilled Pineapple Guacamole

Grilled Pineapple Guacamole is not your ordinary guacamole. The creamy goodness of avocado is combined with the sweet, spicy, and a bit of smokiness from the grilled pineapple.  I love guacamole. I swear I may even choose a dish from a Mexican restaurant just because it has guacamole in it. To me, avocados are the fruit of the gods. I put it on everything, from egg sandwiches and breakfast tacos to salads and even plates of pasta. Being a Californian, eating avocados and guacamole was a natural part of life. It’s funny I have a fond memory of my beloved grandmother from Kansas, distinctly repulsed by the mere thought of eating “one of those slimy things.” She had moved to California to be closer to her kids and grandchildren. They didn’t have avocados in Kansas back then. It is also a texture thing. I have many friends who have texture issues. If you are not familiar with the avocado’s unique texture, it may put someone off.

Nowadays, of course, you can find avocados in almost any supermarket. And they even come in many different varieties. But, of course, the most popular, and I think the best, for guacamole, is the Hass avocados. It is the main variety you see in a grocery store. I grew up with these bumpy-skinned avocados, being from a small town in the bay area they were everywhere. Most of the Hass avocados now come from Mexico. However, there are still a few avocado farms left in California, too.

For the 4th of July holiday, I got invited to a backyard BBQ. My friend’s neighbors are vegan, and they asked me to come up with something fun for them to eat. Grilled Pineapple Guacamole quickly popped into my head. I have run across a few recipes for it in the past, but they all seemed boring with just grilling the pineapple before adding it in. I wanted a bit more zip, so I coated the pineapple slices with chipotle powder before the grilling to add more flavor and a little heat. Please consider using any of the links) This grilled Pineapple Guacamole comes together really quickly and easily if you have a grill pan or, even better, an outdoor grill. The pineapple adds a little sweetness and texture, all in a good way, and the chipotle powder adds that desired zip I was going for.

Grilled Pineapple Guacamole The creamy goodness of avocado is combined with the sweet, spicy, and a bit of smokiness from the grilled pineapple.

Servings: 2 cups
Ingredients
  • Oil for oiling grill grates
  • 2 teaspoon chipotle or chili powder
  • 4 fresh pineapple rings or spears
  • 3 ripe Hass avocados
  • Juice of 1 lime
Instructions
  1. 1/4 cup fresh cilantro leaves, minced, plus whole leaves for garnish
  2. 1 Jalapeno chile, diced (ribs and seeds removed to your liking)
  3. Kosher salt and freshly ground black pepper
  4. Tortilla Chips, for serving
  5. Heat a well-oiled grill or grill pan to high heat.
  6. Coat pineapple rings or spears evenly in the chili powder.
  7. Grill on both sides until grill-marked and charred, 3 to 5 minutes per side.
  8. Let cool, then dice.
  9. Scoop flesh of 2 avocados into a bowl, then mash. Dice the remaining avocado.
  10. Add it to the bowl, then stir in the lime juice, minced cilantro, chile, half of the charred pineapple, and salt and pepper to taste.
  11. Top with the remaining charred pineapple and a couple of cilantro leaves.
  12. Serve with chips
