Instant Pot Ribs are amazingly easy and delicious. Cooking these ribs in the instant pot takes the time to get fall off the bone ribs into a reality even on a work night. I’m new to cooking ribs, and by no means are these as good as some of the great smokehouses in the great BBQ regions of the US. But these will definitely do in mid-winter when you have a hankering for fall off the bone, sticky ribs, and you don’t want to go out. In fact, I might say these are quite tasty. And cooking them in the instant pot, you can have tender juicy ribs on your table in a little over an hour. Yes, they are that quick!
A couple of weeks ago, I decided to try out Butcher Box as a Christmas present to me. I subscribed and found that I was being sent much more meat than I could eat. I now have a freezer full of different cuts of pork and beef that I will be challenging myself to cook. One of the things I got sent was several packages of pork ribs. I don’t have a grill or BBQ in my apartment. I thought, why not try out them in the instant pot. I actually love ribs, but I rarely eat them as I don’t know much about how to cook them, and eating them in New York costs as much as my rent.
The spice rub is mostly spices you already have in your kitchen, ground coriander being the only one some of you might have to get. Liquid smoke can be found in most grocery stores or here on Amazon. A teaspoon is all you need. But it will give you that smoky flavor you will be looking for.
I cannot stress enough how amazed I was at the flavor and tenderness The Instant Pot achieved in just cooking for 25 minutes. I encourage you to make the delectable ribs for your family. - 1-2 racks pork ribs *see note below
- 1 tablespoon brown sugar
- 2 teaspoons salt
- 1 teaspoon cayenne pepper
- 1 teaspoon garlic powder
- 2 teaspoons chili powder
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 2 teaspoons smoked paprika
- 1 teaspoon ground coriander
- ¾ teaspoon cumin
- 2 teaspoons onion powder
- 1 cup water
- 1/4 cup apple cider vinegar
- 1 teaspoon liquid Smoke optional*
- 1 cup barbecue sauce homemade or store-bought

Remove membranes from the back of ribs, if needed.

Rubs seasonings over both sides of ribs.

Place wire trivet rack at the bottom of the instant pot.

Add water, apple cider vinegar, and liquid smoke (optional, but recommended for that great smoky flavor).

Place the ribs upright, with the meat side facing out. If you’re using one large rack of ribs, then circle them around the pot.

Secure lid and close vent.

Press “manual” or “pressure cook” and cook on high pressure for 25 minutes.

When the timer beeps, allow the pressure to naturally release for 15 min, then turn the valve to quick release.

Carefully remove ribs to a large, foil-lined baking sheet and slather them in BBQ sauce.

broil them in the oven for several minutes to caramelize the BBQ sauce. (this is optional, but it makes them taste and look like you’ve used the grill)
*For spareribs, add 5-10 minutes to the cooking time (high number for higher altitudes and very “fall-off-the-bone” ribs, the lower number for the lower altitude and tender ribs).
*Liquid smoke can be found near the BBQ sauces at your local grocery store. It will add an amazing smoky flavor to the ribs.
