What could be better to serve with cocktails than a snack mix. Korean Snack mix is a new twist on an old favorite.
I always try to have a giant jar of snack mix in hand. It’s great for when you just need a little something. It’s easy to put out a bowl if unexpected company shows up. And with cocktails it’s the perfect munch.
To make snack mix you don’t have to just make the standard from the back of a cereal box. You can change it up and with some experimenting come up with some exciting original mixtures. You can add all kinds of fun textures and flavors
I’m a little obsessed with Korean spices and decided to see what gochujang would bring to the party. Gochujang is a Korean chili paste that’s full of umami goodness. I used it in my Korean Short Ribs. In this snack mix it’s fantastic. It’s not too spicy but it brings some great flavor.
The directions are a bit different from your usual snack mix. I melted the butter in a saucepan and added brown sugar and all the other spices so that the sugar would dissolve. Then I poured it over the cereal and nuts. I purposely didn’t add the sesame sticks, honey peanuts, and pretzel goldfish until after it was baked, because I like when there are different flavors in the mix for variety. This snack mix is better baked instead of trying the microwave method, as there is enough moisture that it needs the oven to dry it out.
Try doubling this. It makes great gifts and lasts for a long time. If you can keep from eating it!.
- 3 cups Corn Chex
- 3 cups Rice Chex
- 3 cups Wheat Chex
- 2 cups mixed nuts
- 6 tablespoons butter
- 2 tablespoons brown sugar
- 3 tablespoons Worcestershire sauce
- 3 tablespoons Gochujang, Korean chili paste It can be foud online of gormet grocery stores
- 2 teaspoons onion powder
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 2 tablespoons sesame seeds, white, black or a combination
- 1 cup pretzel goldfish
- 1 cup honey roasted peanuts
- 1 cup sesame sticks

Pre-heat the oven to 250°.

In a large rimmed sheet pan mix together the cereals and the mixed nuts.

In a small sauce pan melt the butter and add the brown sugar Worcestershire sauce, Gochujang, onion powder, garlic powder, salt, and sesame seeds.

Allow the mixture to bubble for a minute or so to dissolve the sugar.

Pour over the cereal, and using a spatula, mix thoroughly.

Bake in the preheated oven for 1 ½ hours, stirring thoroughly every 15 minutes or until the snack mix is dry and lightly toasted.

Remove the snack mix from the oven and stir in the pretzel goldfish, peanuts and the sesame sticks.

Allow to cool completely.

If stored in an airtight jar or plastic bags, this will last for several months.
