The Rocky Mountain Bubbly is One Tasty Cocktail for the Festive Season.
New Year’s Eve always seems to come so fast. It is the Holiday that is harder to plan for as Christmas, Kwanza or Hanukkah Always takes more time and effort. By the time New Year’s Eve comes around I want easy and simple things to make and drink. But I did not just want to have a glass of Champagne or Prosecco. The Rocky Mountain Bubbly is quick to make and different from just a glass of “the bubbly.” It is lively and festive bursting with flavor and lots of bubbles!
This bubbly cocktail is just sweet enough with St Germaine to balance out a good dry gin. I used Spring44 Mountain Gin, which is one of the trios of gins that the distillery produces. When I was out there visiting in October, I got to taste all of them. I took a sip of their Mountain Gin, which is fragrant with pine and citrus and has notes of coriander and ginger that give a bit of earthiness to finish out the flavors. I immediately thought of using it in this cocktail. It makes me think of the mountains and people of the high plains that I miss so much. I love this gin. This Prosecco, Spring44 Mountain Gin and St Germaine cocktail is bubbly like a mountain spring and refreshing like the high mountain air. Naming it, The Rocky Mountain Bubbly seemed appropriate.
All you need to make The Rocky Mountain Bubbly is some Spring44 Mountain Gin, St Germaine, a bottle of Prosecco and a lime or two. It takes no time to mix up one of these cocktails, and you don’t even need a cocktail shaker, just a tall glass of ice, a champange flute, or other serving glass and something to stain it with. This Rocky Mountain Bubbly Cocktail is very easy to drink and tasty! It will make your evening festivities even more special.

Prosecco, Spring44 Mountain Gin, and St. Germaine make this The Rocky Mountain Bubbly. It is a tasty festive cocktail that reminds me of the people and mountains that I love.
- 1 1/2 oz Spring 44 Mountain Gin
- 1/2 oz St Germaine
- 1/2 oz fresh Lime juice
- enough Prosecco to top off, 1/4 to 1/2 cup
- 1 Lime wedge for garnish

Chill a fluted champagne glass in the fridge or freezer until very cold.

In a large glass place 4 or 5 ice cubes.

Pour into the ice-filled glass, the Spring 44 Gin, St Germaine, and the lime juice.

With a long spoon stir 10 to 20 of seconds or so to chill the cocktail down.

Strain into the chilled Champagne flute.

Top with enough Prosecco to come to the top of the glass.

Garnish with a lime wedge
