Tasty, slightly spicy and very quick to make Korean Tartar Sauce is a great fun way to zip up your sauce.
As many of you know I am, obsessed with Gochujang. It is excellent in many different recipes, and incredible just mixed into mayo as a zippy alternative to ketchup or mayo for dipping French fries. The korean chili paste is full of umami flavors, and I just can’t get enough of it. I wondered, what if I added it to good old tartar sauce. The results were delicious. Korean Tartar Sauce is just a little zippy (or lots of zip if you add more!) and very tasty. Korean tartar sauce slathered over some fried fish make one tasty sandwich.
I have been craving a good fish sandwich for a while. Where I work in Midtown Manhattan at The Lion King there used to be several places you could find a decent fried fish sandwich. But in the past 6 months or so for some reason everyone has taken the fish sandwich off the menu. Maybe it has just gone out of favor as the whole of new Your has gone Poke crazy. Not that there is anything wrong with an awesome Poke bowl. In fact, I should do a post on the Poke bowl and how gochujang is perfect in the sauce for making your own Poke bowl at home. But sometimes you just want a warm, crispy chunk of cod sandwiched between a good roll or ciabatta and slathered with zippy tartar sauce.
For this sandwich I just dipped the cod in seasoned flour, then egg and finally some bread crumbs. I fried it in a bit of oil a couple of minutes on each side. If you want a recipe for the fish, I posted a good version here in my blog. The Korean tartar sauce is, however, new and posted here. Adding gochujang to make Korean tartar sauce just made me happy. Making your own Korean tartar sauce is very quick and easy. If you have the time it is great to let the flavors blend a bit in the fridge for a bit. But it is so not necessary if you want to make a quick and tasty meal. I do encourage you to seek out some gochujang. It has become easy to find and well worth having a tub, in your fridge. You can use it in many delicious things, and definitely in Korean Tartar Sauce.
- ½ cup mayonnaise
- ¼ cup chopped sweet gherkins
- 1 tablespoon gochujang
- 1 pinch sea salt
- 1 pinch black pepper
- 1 teaspoon honey
- 1 teaspoon lemon juice

in a small bowl mix together all the ingredients.

If you have time let sit for a couple of hours or overnight in the fridge to blend the flavors. But not necessary.
You can add more gochujang if you want it to be hotter.
