A great pizza sauce is essential for making homemade pizza. I absolutely love making sourdough pizza. There is something so satisfying about the whole process, from the slow proofing of dough to the fast-cooking time of making your own pizza. I love the huge bubbles I get from my dough. It gives it that rustic look with a crisp bottom, chewy interior, and fantastic taste, much better than delivery. I have struggled with finding an easy delicious sauce recipe that would rival my fantastic sourdough crust. I think I have finally found a great version of pizza sauce worthy of topping this masterpiece.
This pizza sauce is made quickly with a can of Italian plum tomatoes, a couple of garlic cloves, a glug of olive oil, and some spices. Whirl that together, and you have a fresh-tasting delicious pizza sauce that isn’t too rich to overpower the toppings and the sourdough crust. This sauce came together in less than 5 minutes and makes enough for 4-5 12-inch pizzas. It can last a few days in the fridge if you want to make pizza over a weekend or have leftover dough. It makes 4 12-inch chewy rustic delicious pizzas and never fails me.
The key here is using the very best quality San Marzano tomatoes imported from Italy to make this sauce. The flavor of the tomatoes is essential when you’re not hiding them behind too many spices or cooking them down and adding tomato paste. This sauce brings the freshness of a noncooked pizza sauce to the pizza party. And it is all a good pizza needs.
I used a blender for this recipe that made this pizza sauce come together in mere seconds. I like to make the sauce while the oven is heating to let the spices bloom in the sauce. - 2 large cloves of garlic, peeled
- 1 28 oz can of good Italian San Marzano peeled tomatoes
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon onion powder
- 1 teaspoon salt
- ½ teaspoon ground black pepper

Place the garlic cloves in the bottom of a blender, followed by the remaining ingredients, or you can use a food processor, being careful not to fill above the liquid line.

Blend until no chunks remain, about 30-45 seconds. Try not to over-process, as it will blend in the seeds imparting a more bitter taste.
I like to let it sit for an hour to help the spices bloom in the sauce.
