I know everyone is going gaga over this fad of feta cheese baked with pasta and tomatoes. But I have been a fan of feta cheese for a very long time. Feta is so good in many dishes far beyond this TikTok sensation. It’s fantastic in a Greek omelet, spinach pie, or even sprinkled over a good Greek salad. It amazes me that this cheese, which has been around since ancient times, has now become a new thing all of a sudden. It is hard to find it in the stores sometimes. Even the cheese clerk at my local grocery store assumed I wanted some for the TikTok recipe. She went on to say it has been tough to keep any in stock. Luckily, even though they were out of Greek feta, they carried a local goat feta made here in Colorado. This ended up being fantastic.

The only note I may give here is to watch the feta carefully when it is under the broiler, as the honey will go from brown to burnt very quickly. It only takes a few minutes, so don’t go anywhere. The goat feta from Jumping Good Goats was incredible. It was tangy and yet not too salty. If you are lucky enough to find some local feta, this is a great place to use it. If you have a little baking dish that you can broil in, and you want to serve it in, you don’t have to line it with parchment paper.

Roasted feta with honey is a luxurious appetizer or meal that is very easy and quick. Salty, sweet goodness, perfect anytime.

Ingredients
  • 1 8- ounce slab of feta cheese drained on paper towels, and blotted dry
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • Freshly ground black pepper
  • Fresh thyme leaves
Instructions
  1. Preheat the oven to 400°
  2. Line a small baking dish with parchment paper. You can use a regular baking dish and transfer the finished appetizer to a serving dish or even a wooden tray.
  3. Drizzle the olive oil over the feta cheese.
  4. Bake the fetta for 10 minutes, or until the cheese is soft and springy and just beginning to melt in the corners.
  5. Preheat your oven on the broiler.
  6. Heat the honey briefly in the microwave to thin it out.
  7. Drizzle the honey over the fetta, trying to cover as much as possible, or use a pastry brush.
  8. Brush the honey over the roasted feta slab. Make sure to cover the entire surface. Pour any excess honey over the top of the slab.
  9. Place the baking pan back in the oven and broil until the cheese is beginning to brown and the honey bubbles. This only takes a few minutes. Keep a very close eye on it as the honey may burn.
  10. Immediately transfer the feta with the parchment to a serving dish if using.
  11. Sprinkle thyme leaves and a nice grind of black pepper.
  12. Serve with crackers or a good crusty sourdough loaf.
