Gochujang Glazed Salmon

Spicy Korean Salmon is a quick and easy way to cook salmon. Using Korean chili paste (gochujang) is a delicious way to have Korean food in your kitchen.

Ingredients

  • 4 6 oz. boneless salmon fillets with skin or without
  • vegetable oil for brushing
  • sea salt to taste
  • black pepper to taste
  • For the gochujang glaze:
  • 3 tbsp gochujang
  • 2 tbsp mirin sweet cooking rice wine
  • 2 tbsp soy sauce
  • 2 tbsp sugar
  • 1 tbsp toasted sesame oil
  • 2 cloves garlic minced or grated
  • 1 tsp grated fresh ginger
  • 1 tsp black pepper
  • For serving:
  • sesame seeds
  • sliced green onions

  2. Preheat oven to 400°
  3. Position a rack 4-5 inches from the broiler.
  4. Line a baking sheet with parchment paper for easy clean-up.
  5. Put the salmon fillets on the baking sheet skin side down. Lightly brush with oil and season with salt and pepper.
  6. Let bake for 8 minutes.
  7. While the salmon is baking, combine all the ingredients for the gochujang glaze in a small bowl.
  8. Remove the salmon from the oven.
  9. Turn the oven to broil.
  10. Brush the salmon fillets heavily with the glaze.
  11. Broil for 5-8 minutes or until the desired doneness. The glaze should be bubbling and beginning to brown on the edges. You can check for doneness with a fork. It is better to err on the undercooked side, as the fish will continue to cook for a bit after you take it out of the oven.
  12. Sprinkle with sesame seeds and green onions. Serve with white rice if desired.
