Huevos Rancheros is My Favorite Breakfast …Period

For as long as I can remember, I have always ordered this classic breakfast whenever I find it on the menu. Heuvos Rancheros is a staple of any Mexican or Tex-Mex resturant anywhere. It classicly involves fried or poached eggs, beans, salsa and tortillas. I am excited to find it showing up on menus in many places now not just in the West. about 10 years ago I decided to try and make my own. It turns out heuvos rancheros are very easy and incredibly quick to make.

I eat this classic mexican breakfast at least twice a week. It’s delicious, tasty, satisfying and, if you have everything ready, it comes together in 5 minutes. This post is actually by request: I’ve served this to guests several times, including to my whole family when we were getting ready for my brother’s wedding in Hawaii. Every time I make this, I’m asked how I make my version of this classic dish. I’ve tried to describe how I quickly make this very tasty, and protein-packed breakfast that I love so much. My version is simple and easy, you can go all fancy and add all kinds of extra fun things like some goat cheese and and fry up some chorizo. but for a quick breakfast this is what I do.

I always have all these ingredients on hand. I used to always keep a can of refried beans on hand just for this reason. But now that I’ve discovered how fantastic making refried beans in the Instant Pot, I now have a bowl of them in the fridge. I go through them so fast I have to keep making more! If you don’t want to make your own, you can most certainly use a can of refried beans. I will say for me, huevos rancheros are all about the beans so choose a good brand and or flavor such as one with jalapeños or black bean. I cheat and use a jarred salsa, and I have completely switched to using non-fat Greek yogurt instead of sour cream, except on special occasions, and even then I think I actually like the yogurt better in huevos rancheros.

This is one of those recipes that I always cheat and use the microwave for unless I’ve got company and if am making more than a couple of them (when I will heat a pot of refried beans on the stove.) Cooking the refried beans in the microwave while you fry the eggs makes this come together in mere minutes and less clean up as I heat them on the plates I am using to serve. If you have the accompaniments, ready plating huevos rancheros is a breeze and very quick. It looks impressive and that you’ve slaved over a meal for an hour.

Traditionally Huevos Rancheros is served with some tortillas, I actually don’t always use them, though they are tasty. If you do use tortillas, make sure to heat them up briefly to soften them. I highly encourage you to make this for breakfast. Huevos Rancheros is packed with protein and is very filling and delicious anytime, anywhere! Ingredients
  • ½ cup refried beans
  • 2 eggs
  • ¼ cup non-fat Greek yogurt or sour cream
  • ¼ cup salsa of your choice
  • ¼ of an avocado sliced or diced
  • 2 flour or corn tortillas
Instructions
  1. Spread the refried beans into the center of a microwave-safe plate. Cover with a paper towel so not to splatter when you microwave them.
  2. Heat a skillet or griddle to medium heat and grease with butter or oil, olive oil works great with huevos rancheros.
  3. Fry the 2 eggs to your liking, I like just slightly runny eggs. Salt and pepper them if desired.
  4. While the eggs are frying, cook the refried beans for about 1 minute and 25 seconds, depending on the strength of your microwave.
  5. Take the beans out of the microwave and remove the paper towel. The eggs should be almost cooked by now.
  6. If you are warming up some tortillas place them between layers of moist paper towels and heat in the microwave for 15 seconds or so, alternately you can heat them on the griddle once the eggs are cooked.
  7. Place the cooked eggs on top of the refried beans.
  8. Garnish with the avocado, Greek yogurt, and the salsa.
  9. Serve with warmed tortillas, if desired.
