The Aussie Pizza

Aussie Pizza is a popular pizza in The Land Down Under.

The Aussie is a pizza covered in a BBQ sauce and with cheese, red onion, bacon, red onion, and fresh eggs. It seems that eggs on anything are very Australian. I used to go to this Australian bar in Brooklyn that had on their burger pickled beets and covered in a fried egg. That burger is still one of my favorite burgers I’ve ever had. Over the next few weeks, I am going to feature some recipes that are popular in Australia. Beginning with this delicious Aussie pizza. I want to help in any way with the devastating wildfires that are burning out of control. And by featuring Australian cuisine and hopefully talking about this country that is far away but dear to many of us. I hope can make more people think about ways to donate and help this wonderful continent.

Due to both natural and manmade causes, and from both climate change and intentionally being set, these fires are horrible.  Millions of animals have been irreplaceably lost. Those that have been lucky to survive have lost much of their habitat. Many farms and homes have also been totally destroyed. These fires have burned more acres than any other wildfire in history, an estimated 25 million. In comparison, the California wildfires in 2018 were only 1.9 million.

Because much work needs to be done to help this peaceful country recover. Even Lion King (where I work), and many other Broadway shows are doing something to help. There is a considerable need for cloth pouches to help foster animals that have been badly burned. The wardrobe departments of several shows have started a huge project to sew these pouches and ship big boxes of them to Australia. To help in the relief efforts. There are many places and charities you can donate money if you want to help with recovery from this devastating disaster. Here is are links for a few of them:

This pizza Aussie pizza is a fun and different pizza from anything I’ve had. If you like BBQ sauce on your pizza, this is a great pizza for you. The fresh eggs add a different twist, and I really like them in this pizza. Aussie Pizza can be found in many pizza restaurants throughout Australia. Even though the most eaten pizza in Australia is actually Hawaiian (ham and pineapple), this is also extremely popular.

You can use my sourdough bread dough as the base as I’ve done here. I like how thick and chewy this dough make the pizza, with a great crisp bottom. Or you can make your own dough. And if you do not want to make your own dough, there is nothing wrong in my opinion about going to your local pizza restaurant and getting a ball from them. They usually will sell you a ball or two very cheaply. if you want to buy a pizza steel like I have used. It is a great investment that I love to use for pizza and bread baking. you can find it on Amazon. (I get a very small commotion if you use the link) It is more durable than a baking stone and it has become indispensable in my kitchen.

 

The Aussie Pizza
The Aussie Pizza is covered in barbeque sauce, sprinkled with cheese, bacon, red onion, and topped with fresh eggs. It’s a fun and different pizza that is both great for breakfast and dinner.

Ingredients
1 ball of a sourdough pizza dough or pizza dough from your own recipe or from a pizza place, see note
  • ½ cup plain BBQ sauce. Try not to use an overly sweet one.
  • 2 cups shredded Mozzarella cheese or a combination of Mozzarella and Jack Cheese
  • ½ cup thinly sliced red onion
  • 5 slices of bacon cooked and crumbled
  • 4 eggs
Fresh parsley chopped for garnish
Instructions
  1. Heat your oven to 500° with a baking or pizza steel or stone. Let the stone heat for at least 45 minutes or an hour if you have time. If you don’t have one, you can bake the pizza on a cookie sheet. Heat the cookie sheet in the oven.

  2. Once the oven has heated, turn the broiler on for 10 minutes while you shape the pizza.
  3. While the broiler is superheating the top of the baking stone, stretch, pat, or roll the pizza dough into a rough 12-14-inch circle. Be careful not to tear any holes in the dough. If you do, pinch together the dough to seal the hole. You don’t need to be perfect. I like my pizzas a bit oblong. It makes them look homemade.
  4. I like to place the pizza onto a piece of parchment paper on top of a pizza peel or even an unrimmed cookie sheet if you don’t have a skin.. The paper will make the pizza easy to slide onto the hot stone. The parchment paper will take the heat. You can also use a peel dusted with cornmeal or just flour.
  5. Spread the BBQ sauce evenly over the stretched dough.
  6. Sprinkle the bacon and thinly sliced red onion over the BBQ sauce.
  7. Crack each egg and place it onto the pizza. Being careful not to break the yolk, each egg should be over one-quarter of the pizza to make them evenly distributed.
  8. When the broiler has super-heated the stone for 10 minutes, turn the oven back to bake at 500°
  9. Carefully transfer the pizza to the hot baking stone or onto a cookie sheet if that is what you have.
  10. Cook the pizza for 10 minutes, check it after 10 minutes to see if the cheese is bubbling and the crust is starting to brown. The key here is to have the crust cooked, but the egg yolks are just cooked enough. It is a fine line. It may take a few more minutes, depending on your oven. Keep checking.
  11. When the pizza is done, sprinkle with some chopped parsley to brighten up the flavors.
  12. Serve hot.
Recipe Notes

Note: You can use ¼ of my sourdough bread recipe for this Aussie Pizza or use your own Pizza dough recipe. In a pinch or if you don’t want to make your own crust, you can find ready-made dough in many grocery stores. And if you have a local pizza restaurant, they will usually sell you a ball or two of their fresh dough.
